Yesterday we celebrated the 4th with my husband's family at the house of his sister. We were able to get some swimming in, but as we started getting ready to eat, it began to rain. We weren't complaining, though, as we've been needing it for a while.

I took along a Pizza Pasta Salad , here's the recipe!

Pizza Salad
From Taste of Home

1 lb spiral macaroni, cooked and drained
3 medium tomatoes, seeded and diced
1 lb cheddar cheese, cubed
1-2 bunches green onions, sliced
3 oz sliced pepperoni
¾ c vegetable oil
2/3 c grated Parmesan cheese
½ c red wine vinegar
2 tsp dried oregano
1 tsp garlic powder
1 tsp salt
¼ tsp pepper
Croutons, optional

In a large bowl, combine macaroni, tomatoes, cheddar cheese, green onions and pepperoni. In a small bowl, combine oil, Parmesan cheese, vinegar and seasonings; pour over macaroni mixture. Cover and refrigerate for several hours. Top with croutons just before serving if desired.

Great salad! We didn't have rain but our 4th was pretty boring. :) We had lunch at Schlotsky's and then we grilled last night! I was surprised that we weren't alone at Schlotsky's. We were counting how many families joined us there, we were 1 out of 11. haha We thought it was comical.
